The name of the attractive guy with the grey hair is GIBBS. "G", "I", "B", "B" and an "S". Not Gibb.
Despite his possessiveness, "Gibbs" is not a possessive himself. For you, as a writer, that means you'll have to add an "s" to his name when you want to write about something that belongs to him.
Example: "Gibbs's Tony."
You could also write "Gibbs' Tony", which is equally correct, even though the 's is preferred for monosyllabic words, and Gibbs is monosyllabic, unless you pronounce the second b.
You cannot write "Gibb's Tony."
